The **Pastry Chef for the Bread Department** is responsible for leading and overseeing all aspects of the bread production within the branch bakery. This role involves creating, baking, and maintaining the quality of bread products while managing a team of bakers. The Pastry Chef for the Bread Department plays a crucial role in ensuring the bakery's bread offerings meet high standards of taste, texture, and presentation.
- Develop and execute recipes for various types of bread, ensuring consistency in taste and quality.
- Manage the entire bread production process, including mixing, proofing, shaping, and baking.
- Monitor and maintain appropriate inventory levels of bread ingredients and supplies.
- Implement and enforce strict quality control standards to ensure the bread products consistently meet high-quality benchmarks.
- Regularly taste-test and inspect bread to identify and address any deviations from the desired standards.
- Recruit, train, and supervise a team of bakers and assistant bakers.
- Schedule staff effectively to ensure efficient bread production while meeting labor cost targets.
- Provide guidance and support to team members, fostering a positive working environment.
- Collaborate with other bakery departments and management to plan daily and weekly bread production schedules.
- Adjust production levels in response to seasonal demand and customer preferences.
- Ensure all baking equipment and kitchen facilities are clean, well-maintained, and in safe working order.
- Report any equipment malfunctions and coordinate repairs as needed.
- Monitor ingredient usage and wastage to control costs and maintain profitability.
- Participate in budgeting and cost analysis to optimize department expenses.
- Stay updated on industry trends and introduce new bread recipes and products to the bakery's offerings.
- Collaborate with the culinary team to create unique and seasonal bread options.
- Adhere to all food safety and sanitation guidelines, ensuring a safe and clean working environment.
- Train staff on proper food handling and safety practices.
**Qualifications**:
- Proven experience as a Pastry Chef or Baker, with a focus on bread production.
- Strong knowledge of bread-making techniques, including artisanal and specialty breads.
- Leadership and team management skills.
- Creativity and the ability to develop new bread recipes.
- Excellent attention to detail and a passion for quality.
- Knowledge of food safety and sanitation regulations.
- Strong organizational and communication skills.
- Availability to work flexible hours, including early mornings and weekends.
**Salary**: RM3,000.00 - RM5,000.00 per month
