Position Overview
The Chef de Partie (CDP) is responsible for preparing and presenting high-quality Mediterranean dishes in accordance with Nizza's standards. This role ensures consistency, excellence in taste and presentation, and smooth kitchen operations within the assigned section. The CDP supports the Chef de Cuisine in daily operations, menu execution, and maintaining food safety and hygiene standards.
Key ResponsibilitiesCulinary Operations
- Prepare, cook, and present Mediterranean dishes (e.g., pasta, seafood, grilled items, antipasti, sauces) according to recipes and standards.
- Manage assigned kitchen section independently during service.
- Ensure mise en place is always complete, fresh, and well-organized.
- Maintain consistency in taste, portioning, and presentation.
- Assist in menu development, seasonal specials, and new dish trials.
Quality & Hygiene
- Ensure highest standards of cleanliness and food safety (HACCP).
- Proper handling, labeling, and storage of food items.
- Monitor food quality, freshness, and expiry dates.
- Maintain kitchen equipment and report maintenance issues promptly.
Teamwork & Coordination
- Coordinate with the kitchen brigade to ensure smooth service.
- Support junior staff such as Commis Chefs with training and guidance.
- Communicate effectively with service staff to ensure proper food flow.
Cost Control
- Minimize food wastage and ensure efficient use of supplies.
- Follow portion control guidelines.
- Assist in inventory checks and stock management.
Requirements
- Proven experience as a Chef de Partie or Demi Chef in a Mediterranean/Italian/Western kitchen.
- Strong knowledge of Mediterranean cooking techniques, ingredients, and flavor profiles.
- Ability to work in a fast-paced, high-volume environment.
- Good communication, teamwork, and time management skills.
- Passion for food and attention to detail.
- Flexibility to work shifts, weekends, and public holidays.
