DUTIES AND RESPONSIBILITIES:
ADMINISTRATIVE FUNCTIONS
- Responsible for the management of kitchen associate by assigning specific duties to all associates under his supervision and instructing them in their work.
- Authorized to recruit personnel in emergency and can recommend overtime or dismissal if required only with the Executive Chef/ or Executive Sous Chef previous authorization.
- Assists in the enforcement of house rules
- Recommends new products which may improve food quality or lower food costs.
- Prepares requisition of food items based on planned meals and transfers sheets.
- Attends to all meal suggestions and complaints.
- Meet with Banquet Manager, sales & convention as well as Executive Chef as required.
- You are to observe and comply to all the policies and procedures of Marriott International and Le Méridien Kuala Lumpur.
- You may also be required to perform or assigned other duties or responsibilities by the management from time to time that's not stated in this descriptions OPERATIONAL FUNCTIONS
- Supervises/demonstrates all cooks and kitchen associate in his assigned section in the proper cleaning, cutting, marinating, seasoning and cooking of all food.
- Participates, observes and taste all food being cooked for visual appeal, taste and temperature.
- Ensure that kitchen are left in clean and orderly condition at the end of each function
- Keep a close watch over all materials used by eliminating waste and spoilage.
- Make sure that all dishes prepared are uniform and that establish portions and recipes are adhered to.
- Check on discipline, cleanliness and hygiene of all associates under his supervision.
