The Chef de Partie (CDP) for Banquet Operations with expertise in Chinese cuisine plays a pivotal role in our culinary team, contributing to the preparation and execution of banquet menus with a focus on Chinese culinary traditions.

This position requires proficiency in Chinese cooking techniques, a deep understanding of flavor profiles, and the ability to deliver authentic and high-quality dishes for banquet events and special functions held at our hotel.


Responsibilities:

  • Collaborate with the Banquet Chef to design and prepare banquet menus featuring Chinese cuisine, incorporating traditional dishes, regional specialties, and innovative creations.
  • Execute the preparation and cooking of Chinese dishes, including appetizers, main courses, and desserts, ensuring consistency, taste, and presentation meet the hotel's standards.
  • Oversee a designated section of the banquet kitchen, maintaining organization and efficiency during food production and service.
  • Conduct regular quality checks on Chinese dishes to ensure authenticity, flavor, and presentation align with guest expectations and hotel standards.
  • Assist in sourcing and selecting highquality ingredients for Chinese cuisine, ensuring freshness and authenticity in every dish.
  • Provide guidance and support to junior kitchen staff, including commis chefs and kitchen assistants, in the preparation and execution of Chinese dishes.
  • Maintain strict adherence to food safety and sanitation practices in compliance with health regulations and hotel policies, including proper handling, storage, and cleanliness of equipment and work areas.
  • Collaborate closely with banquet operations staff and Sales & Marketing to coordinate the timely delivery and presentation of Chinese dishes for banquet events, ensuring guest satisfaction and smooth service execution.
  • Assist in controlling food costs and labor expenses related to Chinese cuisine within budgetary constraints, maximizing profitability while upholding quality standards.

Qualifications:

  • Proven experience as a Chef de Partie or similar role with expertise in Chinese cuisine, preferably in a banquet or catering environment.
  • Culinary degree or equivalent culinary education preferred.
  • Extensive knowledge of Chinese cooking techniques, ingredients, and flavor profiles.
  • Creativity and ability to develop innovative Chinese menu items while maintaining authenticity.
  • Excellent organizational and time management skills.
  • Attention to detail and commitment to quality.
  • Ability to thrive in a fastpaced, highpressure environment.
  • Flexibility to work evenings, weekends, and holidays as required.
  • Certification in food handling and sanitation practices is a plus.

Salary:
RM3, RM3,200.00 per month
