Job Description

  • Conducts daily departmental meeting to ensure proper communication and task to be accomplished.
  • Familiarizes and complies with all legislation affecting the operation, health regulations, and fire and safety regulations.
  • Meets with the guests whenever necessary to honor any special requests or requirements.
  • Ensures there is a sufficient supply of chinaware for outlets, meetings, functions, receptions, etc.
  • Ensures that all operating equipment is maintained in good working condition and raises repair and maintenance requests when necessary.
  • Inspects incoming products and ensures proper storage and rotation, as well as daily inspection of dates & odd items in the refrigerators in compliance with SOP & HACCP regulations.
  • Issues recipe cards and checks all standard recipes ensuring proper portion control, uniformity of taste, and quality. Revises when necessary.
  • Responsible for the daily pastry, chocolate & bakery preparation and delegates different sections.
  • Finds ways to improve the efficiency of the operations, proposes, and initiates new products.
  • Ensures par stock for mise-en-place is maintained.
  • Conducts training sessions for staff.
  • Responsible for pastry section's operating budget, controls food cost, and minimizes wastage.

Requirements:

  • Culinary degree or diploma from an accredited pastry culinary institution.
  • 3 - 5 years working experience as pastry chef/sous chef.
  • Good command of English.
  • Creative.
  • Excellent leadership skills.
  • Team player, self-motivated, and able to work under pressure.
