Allora Cafe strives to be an international pastry shop with Italian influence. While customers appreciate our offerings, they also seek familiar local flavors. We aim to balance both through expert culinary adaptation.

Key Responsibilities:
  • Lead and supervise kitchen operations across all sections.
  • Maintain high food preparation standards and efficiency.
  • Adapt to customer preferences while preserving authenticity.
  • Ensure strong communication between BOH and FOH.
  • Enforce food safety and cost control measures.
  • Train and mentor kitchen staff.
  • Develop new recipes and innovate menu offerings.
Culinary Skills:
  • 3-5 years of experience in pastry, bakery, and pastry laboratory settings.
  • Expertise in international pastries, gelato, and cake design.
  • Knowledge of bread and breakfast pastries (sourdough, panettone, etc.).
  • Understanding of dietary and allergy restrictions.
  • Strong food safety knowledge and adherence to hygiene standards.
Management Skills:
  • Passionate, innovative, and enthusiastic leadership.
  • Excellent communication, organization, and time management.
  • Inventory control and supplier coordination (local and overseas).
  • Cost control: food and labor cost management.
  • Proficiency in software such as Asana, LightSpeed, Triple Seat, and Microsoft Office.
  • Ability to recruit and train the right team members.
  • Commitment to working overnight, public holidays, and festive periods.
  • Collaboration with venue management, office teams, and senior leadership.
  • Experience in high-volume restaurant service.
  • Culinary training certification or equivalent qualifications.
  • Reliable, flexible, and hands-on work ethic.
