1. Ensures that assigned work area has proper level of par stocks and supplies according to daily production sheets (based on house count), daily menus and banquets events. 2. Always keep all refrigeration, equipment, storage and working areas in clean, working condition in order to comply with health department regulations. 3. Visually inspects, selects and uses only food items of the highest standard in the preparation of all menu items. 4. Checks and controls the proper storage of product, checking on portion control, especially in specific cuts of meat, to maintain quality product. 5. Delegates and assists in preparing of cold food items like salads, sushi, cold cuts, salad dressings etc. 6. Prepares daily requisitions for supplies and food items for production. 7. Prepare all dishes following recipes and yield guides. 8. Help in the preparation and design of all food and drinks menus 9. Produce high quality plates both design and taste wise 10. Ensure that the kitchen operates in a timely way that meets our quality standards 11. Fill in for the Executive Chef in planning and directing food preparation when necessary 12. Resourcefully solve any issues that arise and seize control of any problematic situation 13. Manage and train kitchen staff, establish working schedule and assess staff’s performance 14. Order supplies to stock inventory appropriately 15. Comply with and enforce sanitation regulations and safety standards 16. Maintain a positive and professional approach with coworkers and customers
