**Job Purpose**:
Assist with basic food preparation tasks in the Chinese kitchen, focusing on cutting, portioning, and preparing ingredients according to culinary standards and kitchen requirements.
Key Responsibilities:
- Perform basic butchering, cutting, and portioning of meats, poultry, seafood, and vegetables according to the needs of the Chinese kitchen.
- Prepare mise en place (ingredients preparation) as directed by the senior chefs.
- Follow correct cutting techniques specific to Chinese cuisine (e.g., slicing, shredding, dicing, cubing for stir-fry, dim sum, soup bases).
- Ensure all ingredients are prepared to the correct size, consistency, and portion weight.
- Handle all food products safely and hygienically, adhering to kitchen safety and food hygiene standards (e.g., HACCP).
- Properly label, date, and store prepped items to maintain freshness and avoid spoilage.
- Assist in daily cleaning and sanitizing of the work area, cutting boards, knives, and kitchen tools.
- Monitor stock levels of ingredients and notify supervisors when replenishment is needed.
- Minimize wastage by careful handling and preparation of ingredients.
- Follow all instructions from the Butcher Chef or Chef de Partie.
- Support other kitchen operations when required.
**Requirements**:
- Basic knowledge of kitchen operations, food handling, and preparation techniques.
- Familiarity with Chinese cuisine cutting styles is an advantage.
- 1 year of kitchen or culinary prep experience preferred.
- Ability to work in a team and take instructions well.
- Basic understanding of food hygiene and safety practices.
- Ability to work efficiently in a fast-paced environment.
- Physically fit; able to stand for long hours and lift moderate weights.
**Physical Requirements**:
- Ability to use knives and cutting tools safely.
- Ability to stand for extended periods.
- Ability to lift up to 10-15 kg.

Pay: RM2,100.00 - RM2,700.00 per month
