OVERALL SCOPE OF JOB DESCRIPTION
The Mixologist is responsible for creating exceptional beverage experiences that align with The Datai Langkawi's reputation for luxury and excellence. This role combines artistry, technical expertise, and guest engagement to craft innovative cocktails while maintaining the highest standards of service in our bars and restaurants.
SPECIFIC DUTIES & PERFORMANCE RESPONSIBILITIES
- Design and execute innovative cocktail menus featuring premium spirits, local ingredients, and seasonal elements
- Prepare classic and contemporary cocktails with precision, consistency, and theatrical presentation
- Maintain expert knowledge of spirits, wines, beers, and non-alcoholic beverages
- Recommend beverage pairings that complement our culinary offerings
- Create signature drinks that reflect The Datai's unique rainforest and coastal setting
- Deliver personalized, engaging service that exceeds guest expectations
- Interact with guests professionally, sharing cocktail stories and preparation techniques
- Anticipate guest preferences and customize beverages to individual tastes
- Handle guest feedback and special requests with grace and efficiency
- Build lasting relationships with repeat guests and VIP clientele
Menu Development & Innovation
- Fully understands the market needs of in-house guests and local market, assisting in the development of product lines and services accordingly.
- Entertains regular and potential clients and maintains excellent guest relations.
- Update and informs staff of menus and prices.
- Develops and monitor staff sales incentive programs ensuring staff meet their sales targets.
- Implements and utilizes guest history program. Creates pool of regular guest for the outlet.
- Collaborate with the F&B team to develop seasonal cocktail menus
- Research global beverage trends and adapt them to The Datai's luxury positioning
- Source and incorporate local Malaysian ingredients, herbs, and botanicals
- Conduct beverage tastings and training sessions for F&B staff
- Create non-alcoholic mocktails and wellness beverages
Operations & Standards
- Maintain impeccable bar presentation, cleanliness, and organization
- Ensure proper storage, handling, and rotation of all beverage inventory
- Monitor stock levels and submit requisitions in a timely manner
- Minimize waste and control beverage costs without compromising quality
- Adhere to all health, safety, and responsible alcohol service regulations
- Maintain equipment and glassware in pristine condition
- Team Collaboration
- Train and mentor junior bartenders and bar staff
- Work cohesively with kitchen, service, and stewarding teams
- Participate in pre-service briefings and team meetings
- Support events, private functions, and special occasions as needed

REQUIRED SKILLS
- Minimum 3-5 years of bartending experience in luxury hotels, fine dining, or premium cocktail bars
- Advanced knowledge of mixology techniques, spirits, and beverage trends
- Certification in bartending or mixology (e.g., BarSmarts, WSET, or equivalent)
- Excellent communication skills in English (Bahasa Malaysia is advantageous)
- Strong understanding of cost control and inventory management
- Professional appearance and exceptional interpersonal skills
- Flexibility to work shifts including evenings, weekends, and holidays
- Experience in resort or destination properties
- Knowledge of tropical ingredients and Asian-inspired cocktails
- Flair bartending or presentation skills
- Wine knowledge (WSET Level 2 or higher)
- Previous experience training or mentoring staff
- Familiarity with sustainable and zero-waste bar practices
