Job Description:
- To carry out R&D projects such as formulation, sample preparation and sensory evaluation.
- To initiate research & development efforts to create new products.
- To establish/ maintain and update related work instructions, including analysis method, specification (recipe, ingredients list, nutritional fact) and documents of all projects and samples status on time.
- To conduct and monitor the preparation of prototype/ sample and to determine the process specifications predetermined in the lab.
- To improve and revise existing product formulations and processes if necessary to optimize productivity and cost.
- Selection and quality control of raw materials used in products.
- To involve in the R&D, data collection and end-product evaluation on any testing carried on at the plant scale.
- Manage product development activities and participate in cross-departmental activities resulting in meeting food safety and quality objectives.
- Initiate and actively involved in new product sensory and keeping quality evaluation for improvement plan.
- Conduct R&D on the new ingredients selection purposes whenever required which involve both laboratory and plant scale.
- Conduct production trial of new/alternative/substitute ingredients and processes in collaboration with the operation team.
- Coordinate and report the end-product testing for the routine test of raw materials.
Requirement:
- Candidate must possess at least a Professional Certificate, Diploma, Advanced/Higher/Graduate Diploma, Bachelor's Degree, Post Graduate Diploma, Professional Degree, Food Technology/Nutrition/Dietetics or equivalent.
- Min 5 years and above of working experience in the professional kitchen.
- Preferably Senior Executives specializing in Food Technology/Nutritionist or equivalent.
- Excellent knowledge of basic techniques, flavour combination & innovation.
