Achievement of the hotel's financial goals DUTIES AND RESPONSIBILITIES 1. Develop and implement strategies for purchasing area aligned with the company's food and beverage objectives. 2. Maintain records of goods ordered and received. 3.

Locate vendors of materials, equipment or supplies, and interview them in order to determine product availability and terms of sales.

4. Prepare and process requisitions and purchase orders for supplies and equipment. 5. Control purchasing department budgets. 6. Review purchase order claims and contracts for conformance to company policy. 7. Analyse market and delivery systems in order to assess present and future material availability. 8. Develop and implement purchasing and contract management instructions, policies, and procedures. 9. Participate in the development of specifications for equipment, products or substitute materials. 10. Resolve vendor or contractor grievances, and claims against suppliers. 11. Represent companies in negotiating contracts and formulating policies with suppliers. 12. Direct and coordinate activities of personnel engaged in buying, selling, and distributing materials, equipment, machinery, and supplies. 13. Prepare reports regarding market conditions and merchandise costs. 14. Administer on-line purchasing systems. 15. Arrange for disposal of surplus materials. 16. Develop and implement strategies and practices that support employee engagement. 17. Maintain par levels of stock; complete requisition for additional supplies as appropriate. 18. Maintain and research pricing for all purchased goods. 19. Maintain all records needed for accounting. 20. Maintain all specifications and update them in conjunction with the chef on a constant basis. 21. Ensure that all goods required to run the F&B department are available when necessary. 22. Schedule employees based upon forecasted volumes. 23. Manage the operation of the purchasing department; train employees on proper goods receiving and storage methods. 24. Check the proper operation of the dish machine/cleaning equipment daily. 25. Keep purchasing and storage areas clean and organized as per the chef's standards.
