We are looking for:
**Bakery Kitchen Operation Manager**

**Job Duties**:
**Responsibilities**:
**1. Kitchen Management**:

- Oversee the day-to-day operations of the bakery kitchen, including production schedules, and equipment maintenance.
- Coordinate with the Head Baker and other kitchen staff to ensure seamless workflow and efficient production.
- Monitor kitchen activities to ensure adherence to recipes, portion sizes, and quality standards.
- Implement and enforce food safety protocols, including proper handling, storage, and sanitation procedures.

**2. Quality Control**:

- Conduct regular inspections of baked goods to ensure they meet quality standards in taste, texture, and presentation.
- Address any issues related to product quality, consistency, or appearance promptly and effectively.
- Work closely with the Head Baker to develop and refine recipes and production techniques as needed.

**3. Inventory Management**:

- Manage inventory levels of ingredients, supplies, and finished products to prevent stockouts and minimize waste.
- Coordinate with suppliers to ensure timely delivery of ingredients and materials, negotiating favorable terms when possible.
- Develop and implement inventory tracking systems to accurately monitor usage and reorder points.

**4. Cost Control and Budgeting**:

- Monitor food and labor costs to optimize profitability while maintaining quality standards.
- Identify opportunities for cost savings and efficiency improvements in kitchen operations.
- Assist in the development of annual budgets and financial projections for the bakery kitchen.

**5. Hygiene and Regulatory Compliance**:

- Ensure the cleanliness and hygiene of the bakery kitchen production area, warehouse, and other facilities in compliance with regulatory standards and company policies.
- Develop and implement cleaning schedules, sanitation protocols, and pest control measures to maintain a safe and hygienic working environment.
- Conduct regular inspections and audits to identify areas for improvement and ensure compliance with food safety regulations.
- Liaise with government officials and agencies, including the Ministry of Health (KKM), Halal Certification Authority, local municipal authorities (MBPP), and the Ministry of Domestic Trade and Consumer Affairs (KPDNHEP), to obtain necessary permits, licenses, and certifications.
- Act as the primary point of contact for government inspections and audits, ensuring all requirements are met and addressing any concerns or violations promptly.
- Keep abreast of changes in regulations and industry standards related to food safety, hygiene, and Halal certification, and implement necessary changes to ensure compliance.

**6. Logistics Management**:

- Coordinate transportation, receiving, and storage of raw materials, packaging, and finished products.
- Develop efficient processes for inventory management, order fulfillment, and distribution to various channels.
- Monitor logistics performance metrics and analyze data to identify areas for improvement.
- Prepare regular reports on logistics activities to support decision-making and strategic planning.

**7. Maintenance Management**:

- Coordinate maintenance and repair activities for equipment, facilities, and infrastructure.
- Develop preventative maintenance schedules to minimize downtime and ensure operational efficiency.
- Conduct regular inspections to identify maintenance needs and address them promptly.
- Ensure compliance with safety and regulatory standards in maintenance activities.

**8. Procurement**:

- Source suppliers, negotiate contracts, and purchase materials and services at competitive prices.
- Manage supplier relationships and performance to ensure quality and reliability of supplies.
- Evaluate and select vendors based on cost, quality, and delivery reliability.
- Implement procurement strategies to optimize spending and minimize costs while maintaining quality standards.

**9. Company Policy Implementation**:

- Ensure effective implementation of company policies and procedures related to logistics, maintenance, procurement, and overall operations.
- Communicate policies clearly to relevant departments and provide necessary training and guidance.
- Monitor compliance and address deviations promptly, while continuously reviewing and updating policies to align with organizational needs.
- Collaborate with other departments, such as human resources and legal, to ensure alignment of policies with company goals and values.
- Act as a point of contact for employees to address questions, concerns, or feedback regarding company policies and procedures.
