'¢ Working closely with the Chief Steward, Assistant Chief Steward in developing hygiene & sanitation skills for all associates. '¢ Develop stewarding skills in handling chemical and equipment. '¢ Assist Chief Steward in supervise to maximizing associates productivity. '¢ Working closely with line steward and service team, culinary to minimise breakage, glassware, chinaware. '¢ To monitor all stewarding related costs and recommend changes. '¢ Ability to treat people at every level of responsibilities fairly and consistently to achieve high morale and motivation and a minimum turnover. '¢ Should have completed training in kitchen safety and sanitation, handling equipment, utensils training program. '¢ To take complete charge for the department as a team leader in the absence of Chief Steward and corporate with Executive Chef or Ex. Sous Chef in a professional manner. '¢ Assist the Chief Steward in conducting associates on the job training sessions for team members. Chemical and manual handling training, equipment and utensils. '¢ Carry out inventory of operating equipment according to the Hotel's standard and procedure. '¢ Daily chemical controls distribute to the steward team every shift. '¢ Assist in preparing weekly work schedule. '¢ Controls chinaware, glassware and hollowware requisitions and ensure proper storage. '¢ Assigns in detail specific duties to all steward line associates. '¢ Assists in the enforcement of the rules of operation sets by Executive Chef to assure proper cleanliness and neatness off all kitchen areas. '¢ Ability to Co-ordinate with Chief Steward and food all special function requirement, including additional cost and staffing requirement.
SPM / O Level / SKM Level 1 / SKM Level 2 / SKM Level 3 or Equivalent
