Able to cook & manage all kitchen's section/stations. Checking & ensuring all sections are prepared & ready before opening or starting operation. Purpose, manage & assign stationing for each staff & during under staff situation. Fully aware of the S.O.P & all standard recipe. Ensuring entire kitchen crew is operating according to required standard. Ensuring all staff follow the Kitchen Rules set. Able to train & groom new staff. Able to learn the cutting techniques for new fishes & preparing new dishes according to chef requirements. Skilful in all the Japanese Restaurant Kitchen's section. Always aware of the importance of cleanliness & maintain kitchen hygiene. Ensure all food served is at Restaurant's Standard. Ensure all staffs follow the SOP, Opening & Closing procedures.
