To ensure all staffs follows HSE procedure. - To obey all lawful commands. - To read and understand all company’s policies and client’s mandatory policies. - Managing all personnel under his/her control and ensuring they have attended onshore orientation, been trained, appraised and competent to perform any assigned task. - To ensure safe operation of galley equipment, laundry machines, cleaning machines and utensils and to conduct regular briefing of catering staff to report all defects to owner for immediate rectification / Repair. - Shall keep an accurate check on the provision stock and to ensure all spoiled and expired stuff are discarded promptly. All spoilt / expired food / can to be clearly marked for disposal and isolate from normal storage area. - To ensure communicate with camp boss that stores are replenished in good time taking into account the schedule of supply boat service and the consumption rate. - To communicate with client for job schedule planning, supply boat schedule, and any other matter related. - To plan site visit onboard quarterly for every project. - Complete the required monthly reports and submit to the office on regular basis. - Developing and maintaining regular and effective communication with the client through regular interaction with company's and customers to ensure he/she is fully aware of client/customer opinions in service. - Controlling all stocks of food and non-food items within agreed quality standards, inventory levels and budgetary constraints. Operating all standard administrative procedures, to provide accurate timely information, adequate control and concise records. - To brief/encourage catering personnel to participate in UAUC/ACT. - To brief catering crew on job safety analysis before onboard or while onboard. - To prepare budget analysis for each project. - Insure organized, safe, and sanitary professional food service at all times. - Daily food cost returns, Inventory and stock control, stock requisition and menu planning. - Creative culinary ideas and food presentation, as well as knowledge on current food trends - Customer satisfaction and quality assurance
