Bakery Production Supervisor

**Responsibilities**:

- Monitor and execute daily bread and pastry production in accordance with the planned schedule and required quality standards.
- Identify and analyze root causes of product rejections or deviations (e.g., shape, color, bake time, texture).
- Propose and implement corrective and preventive actions (CAPA) to improve product consistency and prevent recurrence of issues.
- Collaborate closely with the Production, QA, and R&D teams to support process improvement initiatives and new product trials.
- Support machine calibration, baking temperature and time verification, and dough proofing control to ensure optimal baking results.

**Key Supplementary Responsibilities**
- Support new product development (NPD) trials by assisting R&D in scaling recipes from lab scale to full production.
- Participate in sensory evaluation tests and provide technical feedback on baking performance for new or reformulated SKUs.
- Contribute to the improvement of standard operating procedures (SOPs) and work instructions related to dough handling, baking, and finishing processes.
- Participate in continuous improvement projects, including waste reduction, yield improvement, and product standardization.
- Assist in training and mentoring new bakers or assistants by sharing best practices to enhance quality, safety, and productivity.

**Requirements**:

- Minimum **2-5 years of experience** in a bakery manufacturing or commercial baking environment.
- **Diploma/Certificate** in Baking, Culinary Arts, Food Technology, or a related field (preferred).
- Strong knowledge of **bread dough fermentation, proofing, baking temperature control**, and **ingredient functionality**.
- Familiarity with **industrial baking equipment** such as mixers, proofers, ovens, dough dividers, and sheeters.
- Understanding of **quality control**, **food safety standards**, and **process improvement** methods.
- Able to work in a **fast-paced production environment** and handle multiple SKUs daily.
- Physically fit and able to work in **warm or chilled environments** when required.
- Good **teamwork**, **communication**, and **problem-solving** skills.
- Willing to work **rotational shifts**, **weekends**, or **overtime** when needed.
- **Immediate availability** is an added advantage.
