**About the job**

Based at the Mandarin Oriental, Kuala Lumpur / within the Culinary Department in Kuala Lumpur, the Cutter 3 (Chinese Cuisine) is responsible for the preparation, service, hygiene quality and presentation, which covers Banquet, All-Day Dining, Club Floor and a la carte. The Cutter 3 (Chinese Cuisine) reports to the Executive Chinese Chef/ Chinese Sous Chef.

**As Cutter 3 (Chinese Cuisine), you will be responsible for the following duties**:

- The Cutter 3 assists the Cutter 2 with his responsibilities for the day to day running of his assigned kitchens and he replaces the Cutter 2 in his absence
- He is to ensure a professional running of his kitchens and has to ensure that agreed quality, hygiene and other standards are kept or surpassed at all times
- He needs to be profitability and cost conscious and needs to be responsible about the daily requisitioning of all food goods
- He has to be familiar with local requirements and sanitation regulations

- Well
- rounded culinary skills
- Minimum completed Secondary School education.
- Apprenticeship in Chinese Kitchen
