Now Hiring: Traditional Thai Chef (Senior Level) Kuala Lumpur Malaysia | Heritage-Driven Thai Cuisine

Let's be clear:

We are not hiring a generic "Thai food" cook. We are looking for a serious traditional Thai chef with depth, discipline, and cultural grounding — someone who understands Thai cuisine beyond trends and shortcuts.

The culinary direction

Our kitchen is built around authentic, regional Thai cooking — ingredient-driven, balanced, and uncompromising.

This is cuisine rooted in heritage, technique, and provenance. No fusion. No dilution. No theatrics.

What we are looking for

  • Strong foundation in traditional Thai cuisine, ideally with regional exposure

  • Deep understanding of balance: acidity, heat, salinity, bitterness, aroma

  • Hands-on experience with from-scratch pastes, stocks, ferments, and classical techniques

  • Willingness and ability to work directly with farmers and fishermen to source produce, herbs, seafood, and proteins

  • Respect for seasonality, traceability, and ingredient integrity

  • Ability to lead, train, and elevate a professional kitchen team

  • Comfortable operating in a boutique, high-expectation, non-corporate environment

What this role is not

  • Not volume-driven

  • Not trend-led or Instagram-led

  • Not a place for ego or shortcuts
