Job Advertisement: Chef de Partie (CDP)

We're looking for a seasoned Chef de Partie to run an assigned section to high standards, support menu execution, and mentor junior cooks in a fast-paced, quality-driven kitchen.
Key Responsibilities
- Lead and manage your section (hot/cold/pastry/butcher) during prep and service.
- Produce dishes to spec, portion, and presentation standards; maintain consistency.
- Oversee mise en place, stock rotation (FIFO), and waste control.
- Uphold food safety: temperature logs, labelling, cleanliness, and HACCP/SOP compliance.
- Train, coach, and supervise Commis/Demi Chef; ensure smooth pass coordination.
- Support menu development, tastings, and seasonal updates; provide costing input.
- Communicate effectively with service team to ensure timely service.
Requirements (Must-Have)
- Minimum 3–5 years' experience in a professional kitchen, including at least 1–2 years as CDP (or strong Demi stepping up).
- Solid technical skills (sauces, butchery, grill/saute, plating) and pace under pressure.
- Proven knowledge of HACCP/food hygiene and kitchen safety.
- Strong organization, attention to detail, and leadership of a small team.
- Flexibility to work shifts, weekends, and public holidays.
- Culinary certificate/diploma preferred.
Nice to Have
- Hotel/resort or high-volume banqueting background.
- Experience with menu engineering and basic food costing.
