OVERALL SCOPE OF JOB DESRIPTION

The Hygiene Executive undertakes the supervision of HACCP Standard and a variety of day-to-day hygiene practices within the hotel facilities. Under the general guidance of the QCI Manager and within the limits of The Datai Langkawi policies and procedures, you will be an integral part of the Quality Control & Improvement team.

A Hygiene Executive oversees the maintenance HACCP Standard practices within the hotel.

SPECIFIC DUTIES & PERFORMANCE RESPONSIBILITIES

  1. Propose and maintain all hygiene practices as per HACCP standard in kitchens/outlets and basic hygiene/sanitation in all work areas, stores, receiving and disposal areas to adhere at all times to required standards.
  2. Conduct and chair HACCP meeting monthly with HACCP and Internal Audit team.
  3. Monitors, assists and performs all procedures and protocols for maintaining an excellent sanitation and hygienic environment.
  4. Conduct daily inspections throughout all food handling areas and produce reports with close focus on Kitchen and Food & Beverage outlets and storages.
  5. Conduct supplier audits to ensure compliance with local regulatory laws / international standards in food safety.
  6. Evaluate the corrective actions taken for the non-conformance noted during the audits.
  7. Ensure full compliance on HACCP SOPs at all production areas, dishwashing utilities, receiving and storage areas.
  8. Continually liaises with external agencies (laboratory, government bureau, health practitioners, etc.) on sanitary matters and visits. Review and follow up on the microbiological results from food laboratory.
  9. Monitor and review HACCP SOPs and SOPs, on cleaning schedules and implementation along with stewarding, kitchen, Food service, engineering, bottling, housekeeping and receiving team.
  10. Identify and report structural deficiencies in the food operation.
  11. Manage and review food complaints effectively.
  12. Manage and maintain HACCP documentation and records.
  13. Conduct training in food safety and hygiene for the food handlers.
  14. Provide support consultancy for The Els Club Teluk Datai and conduct food safety and hygiene inspection and reporting (if needed).
  15. Monitor and check the personal hygiene conditions & working habits of TDL associates.
  16. Manage and maintain a satisfactory waste handling and disposal system together with the sustainability team.
  17. Performs special assignments and projects assigned to the office by the Quality Control & Improvement department.

REQUIRED SKILLS

  1. Good knowledge on HACCP (Hazard Analysis and Critical Control Point) and ISO Food Safety Management System).
  2. Preferably one year work experience as Hygiene Officer / Executive in a hotel or similar function in large restaurants, preferable prerequisite is experience in the Hotel industry.
  3. Responsible self-starter, capable of handling multi-faceted projects and of working under pressure.
  4. Good communication skills, a proactive problem solver.
  5. Creative with international culinary focus and flare. Attention to detail.
  6. Team player, who values teamwork, has good team building skills and is able to communicate effectively with all levels of team members.
  7. Equips and motivates team members to achieve predetermined goals, installing and maintaining appropriate empowerment Programs.
  8. Personable and pleasant to deal with. Reliable and approachable.
  9. Positive can do attitude and flexible approach manages with humility.
  10. High degree of integrity. Strong leadership. Nurtures and develops team members, encouraging innovation.
  11. Good personal grooming and personal presentation.
  12. Good computer skills.
  13. Understands and respects local culture, able to adapt to changing environment.
  14. Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards Certifications.
  15. Preferably holding a Bachelor of Food Science.
  16. Effective trainer, experienced in the delivery of skills training.
  17. Preferably be Halal Certified and fully knowledgeable on all Halal requirements.
