RESEARCH & DEVELOPMENT EXECUTIVE (RYOYU BAKING)

Job Purpose:
Assist in Bakery Development of myNEWS Ryoyu Baking.

Job Responsibilities:

  1. Do product development in general; from designing product to develop the prototypes (Weighing, preparation, shaping (including Danish pastry), baking, simple packaging, product prototype inspection (inspection itself is performed by QA), carrying out in-house monitoring of the product prototype to prove the degree of perfection).
  2. Attend various product development meetings, prepare samples for testing the product prototype, and record the minutes.
  3. Produce samples of product prototypes upon request.
  4. Prepare and manage various materials related to manufacture.
  5. Conduct testing on dough and develop new dough by combining or renewing existing dough in order to improve the quality of our product.
  6. Examine the product prototype and check the expiration date of the product.
  7. Create test runs and specifications for new products, manufacturing process manuals, product information, and product manuals.
  8. Confirm the inspection contents, determine the expiration date, and provide product information to JAKIM.
  9. Regularly perform sensory evaluations on released products to confirm product quality.
  10. Pioneer in new ingredients, able to request various ingredient samples and execute tests.
  11. Stock-take ingredients and share the information with the purchaser to avoid dead stock (in the case of imported products, consider the customs clearance period).
  12. Regularly (at least twice a month) survey market trends to understand the current situation.
  13. Actively participate in food exhibitions and study sessions to improve skills.
  14. Purchase products from competitors (e.g., FamilyMart) and create a catalogue of the products.
  15. Accompany business negotiations with new business partners, design, sample, and improve products, and make adjustments for product launch.
  16. Assist in ad-hoc tasks assigned by the Superior from time to time.

Requirement:

  1. Know and have experience in the process of making bread, including weighing, preparation, shaping, and baking.
  2. Computer literate with Microsoft skills (Excel, Word, etc.).
  3. Able to work independently and as part of a team.
  4. Excellent time management and problem-solving skills.
  5. Excellent hygiene management as will be working in a food manufacturing factory.
  6. Must have a typhoid injection card.
  7. Must be willing to do shift work.
  8. Ability to handle multiple assignments at any given time in a team environment.

Good to have:

  1. 3 to 5 years of experience in baking, including Danish pastry.
  2. Fluent in English and Malay.
  3. Any certificate related to bread making.
