Job Purpose

Demi Chef works as a part of the kitchen team. He/ She is responsible to prepare food that conforms to company and kitchen standard. He/ She is also responsible for the day to day running of a given section within the kitchen.

**Maintaining and overseeing the daily operations of kitchen**
- Compile the total menu from patient’s menu order sheet in the food production form for daily production and update any changes (i.e. bed transfer, new admission, diet changes).
- Daily checking and distribution of raw materials.
- Prepare and cook foods which include patient meals and special functions.
- Maintain portion size to ensure a consistent of product, maximized patient satisfaction and minimize wastage.
- Prepare and allocate snacks and beverages for breakfast, afternoon tea and supper based on patients’ order and schedule.
- Prepare food and beverages for function and tea time.
- Monitor the cooking and serving of food to patients and staffs, following standardized recipes.
- Plan and discuss the menu for special events and meetings
- Assist in the planning of new menus.

**Maintain kitchen area, equipment, and other areas of responsibilities in a clean and **well maintained condition.**
- Check and ensure the cleanliness of the entire kitchen daily before and after the operation.
- Daily check and record the temperature of the chillers, freezers and cold room. Report to Food Service Supervisor immediately if any equipment breakdowns.
- Monitor the Pantry Aides’ and Cooks to ensure cleanliness of food preparation, cooking and serving of diet to the patient.

**Qualifications**
- Possess a minimum qualification of SPM, Diploma in Hospitality or Tourism Management or equivalent.
- Must have basic knowledge of production and operations in all relevant kitchen areas.
- Must be familiar with proper use and cleaning of relevant kitchen equipment and machinery.
- Effective communication skills, both verbal and written.
- Ability to form positive relationships with colleagues.
- Ability to work under mínimal supervision.
- At least 2 years of experience in the culinary, food and beverage, or related professional area.
- Previous working experience in a kitchen providing meals for large numbers preferred

**Working conditions**

Demi Chef works indoors throughout shift in well-lighted kitchen areas. While performing the duties of this job, Demi Chef is frequently exposed to heat or cold from the mechanical equipment. He/ She may require making frequent short trips to the walk-in freezer and refrigerator and frequently works behind hot ranges. He/ She is required to work various schedules including evenings, rotating shifts and public holidays. The noise level in the work environment ranges from mínimal to moderate and room temperature may fluctuate.

**Physical requirements**

Demi Chef may require some standing and walking throughout the shift. He/ She has to move food items using trolley. He/ She must be able to multi-task and withstand multiple demands on ad hoc basis.
