**Job Summary**:
Working as the Chef, you will be responsible for overseeing kitchen operations while maintaining a safe and sanitary work environment for the staff. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional. This individual will be responsible for overseeing kitchen operations, directing the preparation of meals in accordance with corporate programs and guidelines.

Korean Cuisine Chef will lead the Da Ging Sdn Bhd kitchen team and be responsible for the day-to-day kitchen operations. The Head Chef’s key roles and responsibilities include:

- Plans menus for food outlets for Da Ging.
- Schedules and coordinates the work of cooks and other kitchen employees.
- Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
- Establishes controls to minimize food and supply waste and theft.
- Develops standard recipes and techniques for food preparation and presentation to assure consistency in quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.
- Prepares necessary data for applicable parts of the budget and costing; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to assure that financial goals are met.
- Ensures proper staffing for maximum productivity and high standards of quality to achieve maximum profitability.
- Controls food costing and maintain food recipe file.
- Evaluates food quality to assure that quality standards are consistently maintained for all outlets. (Outlet Audit)
- Interacts with customers for feedback and to assure that food production consistently exceeds the expectations of guests.
- Evaluates products to assure that quality, price and related goods are consistently met.
- Develops policies and procedures to enhance and measure quality.
- Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
- Provides training and professional development opportunities for all kitchen staff.
- Plans regular and modified menus according to established guidelines
- Follows standardized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality
- Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
- Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned
- Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products

- Performs other duties as assigned
- Day-to-day execution and implementation of restaurant marketing &
advertising, how to best present and contribute our restaurant to a brand
awareness

**Requirement**:

- At least 5 years of experience in the kitchen of a recognized local or international restaurant;
- Entrepreneurial minded with a passion for creativity and hospitality;
- Strong grasp of and ability to execute Korean Cuisine
- A team player who is able to communicate well and try new things.
- Minimum 3 years of progressive culinary/kitchen management experience, depending upon formal degree or training
- High volume, complex food service operations experience - highly desirable
- Hands-on chef experience a must
- Comprehensive knowledge of food trends with a focus on quality, production, sanitation, food cost controls, and presentation
- Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
