Main responsibilities:
General:

- Knows the food menu/special promotions including preparation times, cooking methods, main ingredient and side dishes for the outlet(s) assigned.
- Ensures all guest requests and complaints are handled appropriately adhering to the hotel’s general guidelines for service recovery.
- Prepares work schedules and ensures all staff is rostered in accordance with business levels.
- Ensures all opening and closing duties are implemented in accordance with established standards.
- Conducts daily pre-service briefings.
- Checks daily mise-en-place, cleanliness and set-up before service.
- Administers requisitions: food store, beverage store etc.
- Handles all telephone calls courteously and efficiently.
- Maintains logbook.

Bar:

- Ensures all bar counters are set-up on time before service and according to standards.
- Supervises service in all bar areas and work hands-on in the operation when required.
- Ensures bar areas, counters and tables are clean and glasses replenished.
- Performs administrative tasks such as bar requisitions, inventories, work schedules and operating equipment control.
- Knows all beverage recipes and prepare all drink orders accordingly.

Outlet Service:

- Welcomes guests and assists in seating procedures.
- Supervises and participates in serving food & beverage according to standards.
- Knows table/seat numbering, takes orders and uses Micros system to input orders.
- Establishes and maintains strong customer relationships and actively promotes repeat business.

Cashiering:

- Ensures charge-to-room checks are signed and the name matches with the room number.
- Ensures the validity of all credit cards.
- Processes all Officer’s Check, Entertainment Check and City Ledger charges in accordance with established policies & procedures.
- Properly records all sales of food and beverages.
- Prepares accounting for and handling of both the daily cash receipts as well as the Cashier’s House Fund.
- Properly completes the Remittance Report and remit receipts in accordance with accounting procedures.
- Properly completes the Restaurant Cashier’s Summary.
- Accounts for all guest checks issued.
- Accepts cash payments and makes correct change.
