Assistant Restaurant Manager

**Overview**:
- Along with the General Manager, responsible for the daily operations of the restaurant, including profitability, monitoring all costs and controls while not compromising guest satisfaction or quality.
- To operate the restaurant to the highest of standards; to comply with Nobu procedures and policies and applicable laws and regulations governing health and safety and the workplace.
- To maintain the Nobu standards and ensure excellent service. Must work closely with General Manager, Nobu chefs and executives in promoting the company’s culture, mission and philosophy.
- To maintain excellent guest relations and develop a loyal clientele, including VIP’s and regulars.
**Qualifications**:
- Proven experience in a supervisory role within the hospitality industry, preferably in a restaurant setting.
- Excellent leadership and interpersonal skills.
- Strong organizational and multitasking abilities.
- Knowledge of food safety regulations and best practices.
- Ability to work effectively under pressure in a fast-paced environment.
- Able to work flexible schedule to accommodate the business needs of the restaurant.
**Essential Job Functions**:
- Assist in hiring, coaching, disciplining, counselling, and conducting performance reviews.
- Train and mentor Front of House staff.
- Fill in for the general manager as member of the management team when he is not present at restaurant.
- Responsible for assigning and changing Bar Staff schedules. Assists in assigning and changing Floor Staff schedules.
- Build staff morale while providing constructive criticism to reduce turnover.- Follow and enforce restaurant cash handling policies and ensure cash security
- Follow and enforce proper POS operations and tracking of credit cards sales and reporting
- Manage cost controls
- Perform daily opening and closing duties
- Record daily sales
- Safety management
- Develop and maintain strong relationships with management and executive staff in other Nobu restaurants
- Travel as necessary to off-site events and locations
- Follow and maintain proper time-keeping practices for staff
- Dining Room Service Management:
- To seat the room and ensure it is running smoothly
- To take requests for bookings.
- To ensure the front desk is set up and ready for service.
- To ensure that guests informed about their table wait time and other pertinent information.
- To communicate with Maitre’d and floor staff regarding late tables, VIP’s, regular guests etc.
- To communicate with hosts/hostesses, and servers regarding out times and seating plans. Maintains efficient flow of returned tables for reservations.
