1. To assist the Head Chef during service for timing and progress of all dishes. 2. To ensure that the presentation, taste, texture and quantity are maintained to the standards laid by the Company. 3. To be fully conversant with the menu and to be adaptable with continual changes to ensure that the menu is kept in line with customer demands and Company policies. 4. To ensure that the correct and same ingredients are used as specified by the Head Pastry Chef to ensure quality is upheld at all times. 5. To ensure that all appliances, fixtures and fittings are safe and work in accordance with Health & Safety regulations and report any faults to the Head Chef or Senior Sous Chef. 6. To be fully aware of the Restaurant’s Fire Safety Procedures and Health & Safety regulations. 7. Maintaining high standards of hygiene. 8. Preparing the ingredients. 9. Measuring dish ingredients and portion sizes accurately. 10. Dealing with deliveries and stock rotation. 11. Support Chef De Partie in the daily operation and work. 12. Work according to the menu specifications by Chef De Partie. 13. Keep the work area at all times in hygienic conditions according to the rules set by the outlet Control food stock and food cost in your section. 14. Follow the instructions and recommendations from the immediate Superiors to complete the daily tasks. 15. Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes, and preparation techniques. 16. Coordinate and participate with other sections of requirements, cleanliness, wastage, and cost control.

With this in mind, each of our outlets are styled with distinct personalities which complement our imaginative approach to food. We’ve also extended the Serai Group experiences beyond the border of our restaurants, as our catering service reaches out to event-goers, private functions and intimate gatherings. The group aspires to continue introducing new concepts and ideas to the market. With expansion on the cards, Serai Group is excited to be able to share good food with everybody.
