Implementing new kitchen skill, training of kitchen personnel, carry out food research and improvement on food quality.
- Work closely with all Cook on ensuring perfect handling of food preparation and standard of cleanliness is adhered to as per check list.
- High awareness on company standards concerning food production, food presentation, food handling, controlling procedures and F&B sanitation and healthy guidelines.
- Constantly educate subordinate by explanations and demonstration of first class quality food production.
- Supervise and train kitchen crews on a face to face basis where the strong and weak points are noted for future improvement.
- Conduct monthly audit and update feedback from kitchen staff to Head Chef for improvement purposes.
- Assist Head Chef with yearly menu/promotion/activity planner follows by executing menu discussion, food testing, photo shooting, etc.
- Work closely with purchasing team to monitor product supplies from time to time and to make sure to ensure only sufficient/quality/certified/halal products purchased for business needs.
- Ensure all machines/equipment kept in good condition at all the time and to supervise instruction program on handling of equipment for new or re-rated crew members on handling procedures of equipment.
- Familiar with new kitchen set up protocol and good knowledge on kitchen equipment required.
