Perancangan & Penyediaan Menu

  • Merancang, membangun dan menstandardkan resipi untuk operasi
  • Mengawalselia standard menu untuk operasi restaurant
  • Menyediakan SOP memasak yang konsisten bagi setiap produk.
  • Menguji resipi baru ( R&D ) untuk penambahan menu atau peningkatan kualiti

Pengurusan Operasi Harian Central Kitchen

  • Menastikan operasi harian berjalan lancar, prep,cooking, packing,chiller/freezer management
  • Memastikan semua bahan disediakan mengikut forecast & production plan.
  • Memantau aliran kerja untuk mengelakan bottleneck dan pembaziran.

Kawalan Kualiti ( Quality Control )

  • Memastikan setiap batch produk menepati standard rasa, tekstur, warna dan berat.
  • Menjalankan random check pada produk siap ( Finished Goods )
  • Memastikan shelf life, GMP & food safety requirements dipatuhi

Pengurusan Stok & Bahan Mentah

  • Memastikan FIFO/FEFO dipraktikan.
  • Mengawal kos makanan (food cost control) dan pembaziran

Latihan & Kepimpinan

  • Melatih team dapur mengenai teknik masakan, SOP, kebersihan dan keselamatan makanan.
  • Menyelia Commis, Cook dan Production Staff.
  • Memberi tugasan dan memastikan Productiviti staff optimum.

Keselamatan, Kebersihan & Audit

  • Memastikan ruang produksi dipatuhi standard kebersihan ( GMP )
  • Memastikan team mematuhi PPE, food handling & safety guidelines.
  • Menyediakan laporan audit dapur dan tindakan pembaikan

Pelaporan & Dokumentasi

  • Menyediakan laporan pengeluaran harian, yield test, food cost, batch records.
  • Menjaga fail SOP, resipi standard, COGS dan dokumentasi lain.
  • Melapor terus kepada ketua SIC.
