Head Baker (Artisan Bakery & Viennoiserie)

About the Role

We are looking for a passionate and skilled Head Baker to lead our bakery production team, crafting high-quality breads and viennoiserie that balance traditional French techniques with a modern local touch. The ideal candidate is detail-oriented, quality-driven, and thrives in a fast-paced artisan environment.

Key Responsibilities

  • Oversee daily production of all bakery and viennoiserie items, ensuring consistency in taste, texture, and presentation.
  • Develop, test, and refine recipes — from classic croissants to creative seasonal pastries.
  • Lead and train the bakery team on mixing, laminating, shaping, and baking processes.
  • Plan production schedules and manage ingredient inventory to meet daily café and retail demands.
  • Ensure kitchen hygiene, food safety compliance, and proper equipment maintenance.
  • Collaborate with management on new product launches and seasonal menus.
  • Monitor wastage and control food cost without compromising quality.

Requirements

  • Minimum 5 years of professional baking experience, with at least 2 years in a leadership or senior baker role.
  • Strong technical skills in viennoiserie, laminated dough, sourdough, and artisanal bread.
  • Experience in café or independent bakery production preferred (not hotel or factory-based).
  • Able to lead a small team with a hands-on approach and good time management.
  • Passionate about innovation and continuous improvement in baking techniques.
