About the Role
Dewan by Chef Wan is seeking a highly creative and experienced Executive Chef to lead our back-of-house operations. The ideal candidate will champion Chef Wan's culinary philosophy, authentic Malaysian flavours with modern techniques while ensuring exceptional food quality and guest satisfaction.
You will oversee kitchen operations, lead culinary teams, manage costs, and deliver an elevated dining experience that reflects our brand standards.
Key Responsibilities
Leadership & Kitchen Operations
- Lead and supervise kitchen and stewarding teams
- Ensure smooth daily operations and adherence to brand standards
- Develop and implement SOPs, kitchen policies, and food safety procedures
Culinary Excellence
- Lead menu development, presentation, and food innovation
- Maintain consistent standards in taste, plating, and portioning
- Stay updated with global restaurant and culinary trends
Operational Performance
- Solve operational issues quickly (inventory, equipment, workflow)
- Improve kitchen efficiency while reducing food wastage
- Continuously evaluate and enhance kitchen processes
Financial Control
- Manage kitchen budgets, food cost, and labour cost
- Support menu engineering and pricing strategies
- Source ingredients with profitability and quality in mind
Guest Satisfaction
- Ensure every dish meets premium standards
- Actively address customer feedback
- Maintain reputation for exceptional Malaysian cuisine
Requirements
- Diploma or Degree in Culinary Arts or Hospitality (preferred)
- Minimum 8 years relevant experience, including 5 years in a senior chef role
- Background in high-end restaurants or 5-star hotels
- Strong leadership capabilities with multicultural team experience
- Certified in food safety / HACCP
- Strong skills in cost control, inventory, and kitchen management
- Excellent communication in English
- Passionate, energetic, innovative, and detail-oriented
