**Job Summary**:
Duties include being responsible for assisting the operations manager in the entire running of the business, including the coordination, and overseeing of the different areas at a store level. Works with other team members (including Head Chef, Sous Chef etc.) in the performance of duties as set out below:

- Able to perform & delegate all key duties of other positions.
- On call for any emergencies and any unexpected store or staffing requirements
- Identify through spot audits accurate cash handling and banking.
- Perform random cash audits daily (minimum 3 per day) weekly RCA sheets to be submitted to finance by no later than every Monday, weekly.
- Weekly reports to be submitted no later than Sunday for the week happenings.
- Involvement in recruiting, induction, training & exits of all level staffing.
- Report all maintenance and /or SBU issues to management or Airport Management.
- Investigate, explain & report on any discrepancies to Finance via operations.
- Monitors COG’s expenditures through the development and use of effective par levels, stock management and liaise with purchasing manager.
- In store COE control through effective check on scheduling vs actual labor usage.
- Ensure E-learning is completed and cash handling certificate saved.
- Visual merchandising cabinets maintained to a high level including freshness of

product, cake tags and product
- Maintain stock control through recording & monitoring wastage, accurate monthly stock takes, effective ordering/receiving and storage procedures.
- Enforce daily and weekly systems and procedures to ensure a high level of presentation, hygiene, service, product quality and security.
- Effectively discipline and praise staff as required.
- Perform administrative duties in conjunction with the appropriate management sectors (i.e. recording of food safety requirements, following up recipe mis-alignments)
- Ensure all menu items are available throughout the entire trading day, source

appropriate action if unavailable including marketing assistance where required.
- Ensure the cleanliness of the store is in alignment with Food Safety and company standards.
- Ensure all key products are displayed and staff are informed, spot quiz staff of any current

deals.
- Involvement in menu development/engineering and new product implementation in units with final presentation/approval by OM
- Spot check staff’s knowledge of airline deals or any other marketing initiatives, if non-compliance liaise with marketing for operations run training
- Complete regular risk assessments of units and co-ordinate with OM to resolve issues in a timely manner
- Complete and maintain digitalized incident reports for airport locations with appropriate follow-up action, involving OM based on company liability/risk.
- Run the operations meetings in the specific location required, including follow-up actions with departmental heads.
- Co-ordinate and control the MEP department.
- Track, motivate and develop SM’s including the digitalization of appraisals into the Success Factor system.
- Authority to sign HR related documentation; missed punches, annual leave of SM’s, unpaid leave and PH accruals.
- Track, monitor and improve store scheduling including the approval of SM’s weekly working week.
- Compliance and active involvement including follow-up actions based on internal/external audits by third parties.
- Build relationship and liaise with airport management team to manage all official requirements of Airport.
- Setup and be involved in pre-opening activities include planning and execution with Brands, contractors, and airport management.
- Support and manage reinstatement of stores when needed.
- Monitor, track and resolve all equipment repairs and servicing issues.
- To conduct monthly store operational audits.

**Requirements**:

- Malaysian age up to 38 years old.
- Must be physically fit and able to walk long distance or stand long hours during work and site visits.
- Proficiency in English, Bahasa Malaysia and strong financial acumen.
- Proficiency in Microsoft Office.
- Demonstrated knowledge of basic _food safety_ policies and procedures as outlined in handbook and all manuals.
- Detailed and up to date knowledge of preparation and presentation of all menu items including food and beverage in accordance with franchised + in house brands.
- Detailed knowledge of all store operations.
- Hospitality knowledge including excellent service, how to manage fast paced environments and problem solving skills.
- Knowledge of workplace health and safety regulations and relevant industrial relation regulations obtained through HR.
- Able to read and understand an income and expenditure report and cash flow analysis.
- Pro-active, positive, enthusiastic, energetic, responsible and friendly.
- Professional business attitude.
