The Role
- Provide effective leadership and is accountable for the overall success of the daily pastry operations.
- Manage the quality/quantity of items produced by the Pastry department, coordinating the production as it relates to banquet and restaurant functions.
- Ensures that the hotel’s food production standards are consistently high in line with set standards and paying particular attention to taste, food presentation, temperature and portioning.
- To match volume of food production in kitchen to business conditions thereby avoiding the extremes of over-production or under-production. Right sizing of food production prevents food wastage and keeps food cost within budget.
- Able to develop, designs, or creates new ideas and items.
- Create new and exciting desserts to renew hotels menus and engage the interest of customers.
- Ensure excellent quality throughout the dessert offerings.
- Prepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes.
- Able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants and doughnuts etc.
- Follows proper handling and right temperature of all food products.
- Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.
- Handle all food transfers out of the pastries and bakery to other areas and ensures proper documentation.
- Coach, lead, and inspire pastry and bakery team by training and setting clear goals and objectives.
Talent Profile
- Diploma/Degree in Culinary Arts.
- Minimum 3 years as a Pastry Chef, preferably in a 5-star hotel.
- Good understanding of food, health, and safety regulations.
- Good leadership and organizational skills.
- Good communication skills.
- High level of creativity and execution skills.
- Result oriented, proactive, innovative leader with an ability to lead and improvise in all situations.
