**The Pastry Sous Chef **is a crucial member of the kitchen team, specializing in the creation of various baked goods, desserts, and pastries. Able to work with less supervision and the Pastry Sous Chef plays a key role in the planning, preparation, and execution of the pastry section within a restaurant, bakery, hotel, or other culinary establishments.
**Responsibilities**:
**Production and Presentation**:
- Oversee the daily production of a variety of pastries, desserts, and baked goods.
- Ensure that all pastries are prepared, baked, and presented according to established recipes and standards.
- Monitor the quality and consistency of pastry products.
**Menu Development**:
- Collaborate with the Executive Pastry Chef or Head Pastry Chef in developing new pastry and dessert menu items.
- Stay updated on industry trends and incorporate innovative ideas into the pastry offerings.
**Supervision and Training**:
- Lead and supervise pastry staff, providing guidance and instruction to ensure efficient and high-quality production.
- Train and develop new pastry team members.
- Monitor staff performance and provide constructive feedback.
**Inventory Management**:
- Manage and control pastry inventory, ensuring proper stock levels and minimizing waste.
- Coordinate with the purchasing department to order necessary ingredients and supplies.
**Quality Control**:
- Implement and maintain strict quality control measures to meet or exceed food safety and sanitation standards.
- Conduct regular inspections of pastry preparation areas to ensure cleanliness and organization.
**Collaboration with Other Kitchen Departments**:
- Coordinate with other kitchen departments to ensure a seamless flow of service and consistency in overall menu execution.
- Communicate effectively with the culinary team to meet overall kitchen goals.
**Cost Control**:
- Assist in controlling food and labor costs within the pastry department.
- Work with the management team to develop cost-effective recipes and portion control.
**Special Events and Catering**:
- Contribute to the planning and execution of special events and catering functions, providing expertise in pastry and dessert offerings
**Adherence to Standards**:
- Ensure compliance with all health and safety regulations, as well as company and industry standards.
- Uphold and promote a positive and professional work environment.
**Requirements**:
- **Diploma in Pastry or Bachelor’s Degree in Pastry**:
- **3 -** **5 years’ experience as Pastry Sous Chef or in a similar role is essential.**:
- **Strong knowledge of pizza-making techniques, including dough preparation, sauce making, and baking.**:
- **Creativity **and ability to develop new pastry recipes and flavor combinations.
- **Excellent leadership** and team management skills.
- **Strong organizational and time management abilities.**:
- Knowledge of food safety and sanitation regulations.
- Ability to work in a fast-paced and high-pressure environment.
- Excellent communication and interpersonal skills.
Pay: RM2,253.21 - RM7,190.15 per month
