Job Responsibilities:

Kitchen Operations

  • Lead and supervise daily food preparation and cooking activities across all kitchen outlets (restaurant, banquets, room service, events).
  • Ensure all dishes meet the resort's standards for taste, quality and presentation.
  • Maintain cleanliness, hygiene and safety standards in the kitchen according to food handling regulations.

Menu & Recipe Management

  • Plan and develop menus, seasonal specials, buffet themes and event/banquet menus.
  • Standardize recipes and portion sizes to ensure consistency across the kitchen.
  • Introduce new dishes and improve existing items based on guest feedback and market trends.

Staff Supervision & Training

  • Supervise, mentor and schedule kitchen staff including cooks, commis and stewards.
  • Conduct training on cooking techniques, hygiene practices and food safety.
  • Ensure staff discipline, performance monitoring and teamwork are maintained.

Inventory & Cost Control

  • Monitor and control cost of goods, wastage and portioning to achieve food cost targets.
  • Manage daily/weekly inventory, stock rotation (FIFO) and order ingredients from suppliers.
  • Liaise with suppliers to ensure quality and timely delivery of fresh products.

Quality, Hygiene & Safety

  • Ensure full compliance with HACCP, Halal, food safety and health regulations.
  • Maintain proper storage conditions to prevent contamination and spoilage.

Coordination & Communication

  • Work closely with F&B Manager, Restaurant Managers and Banquet Team to support smooth service.
  • Participate in menu briefings, service briefings and management meetings.
  • Support special events, themed dinners and large group functions.
