What we expect from you as our Sous Chef?

On a daily basis, you will be required to keep the kitchen running smoothly. This includes being responsible for ordering the ingredients for the restaurant, maintaining the order and CLEANLINESS of the kitchen, keeping all of the cooks on task and teaching them new menu items and techniques, regular stock checks and inventory. In many cases, you are responsible for the order and discipline in the kitchen, making recommendations and giving progress reports on cooks. As a Sous Chef, you have responsibilities to the restaurant and to yourself - you need to be constantly upgrading your skills so that you can step into the executive chef position when the time is right.

As a Sous Chef, you should know how to cook every single item on the menu, be able to step in and replace anyone cooking on the line in case of an emergency and be able to step into the top position when the situation calls for it. You should have the experience of working every single station in the kitchen, be highly organized and be familiar with ordering and cost analysis for the entire menu.

A sous chef should also be a good teacher, because they are responsible for all training new kitchen staff, including existing ones who require retraining. You will often be required to expedite tasks during service (call out to each cook when to start cooking different menu items so that all of the orders for a single table come up at the same time) and you are the last person to see and add finishing touches to the food before it goes into the dining room. You need to be a quality control expert in that regard and be able to pick our error and mistakes in food preparation through taste and sight.

Most of all, as our Sous Chef, you a required to have a positive disposition and outlook towards life, a pleasant personality, and just an overall happy person with a can-do attitude.
