Job Summary
Villea Port Dickson is seeking an experienced and dynamic
Food & Beverage Manager
to lead, manage, and elevate the hotel's F&B operations. The ideal candidate must possess strong leadership abilities, excellent communication skills, and solid managerial experience in the hotel industry. This role focuses on ensuring exceptional guest experiences, developing the F&B team through continuous training, and driving operational excellence in line with the company's objectives.
Key Responsibilities
1) Operational Leadership & Service Excellence
- Oversee daily operations of all F&B outlets, including restaurants, bars, banquets, room service, and special events.
- Ensure the highest standards of service, hygiene, and food quality are maintained at all times.
- Review, implement, and improve Standard Operating Procedures (SOPs) to meet brand standards.
- Conduct regular inspections and ensure the readiness of all F&B areas.
2) Team Leadership, Coaching & Training
- Lead, motivate, and mentor the F&B team to achieve operational excellence.
- Conduct ongoing training programs focused on service standards, product knowledge, grooming, and guest interaction.
- Oversee manpower planning, staff scheduling, performance evaluations, and succession planning.
- Foster a positive working environment that encourages teamwork, professionalism, and continuous improvement.
3) Guest Experience & Quality Assurance
- Maintain a strong presence on the floor to observe service flow and guest interactions.
- Handle guest feedback and resolve service issues professionally and promptly.
- Implement strategies to enhance guest satisfaction and maximise repeat business.
- Ensure all guest touchpoints reflect the hotel's brand values and service culture.
4) Financial & Cost Control Management
- Prepare, monitor, and manage departmental budgets, including revenue forecasts and cost controls.
- Implement cost-saving measures without compromising service quality.
- Analyse sales reports, menu performance, and operational trends to optimise profitability.
- Work with procurement to ensure proper inventory management and supplier compliance.
5) Menu Development, Events & Promotions
- Collaborate with the culinary team on menu planning, seasonal offerings, and product innovation.
- Coordinate and manage all banquets, weddings, corporate functions, and hotel events.
- Work with the marketing team to develop F&B promotions, campaigns, and special dining concepts.
- Ensure timely execution of events with excellence in service and presentation.
6) Safety, Compliance & Regulatory Standards
- Ensure compliance with food safety, Halal requirements (where applicable), hygiene regulations, and hotel policies.
- Maintain proper stock levels, storage standards, and handling procedures.
- Oversee departmental audits, safety briefings, and certification requirements.
Qualification & Requirements
- Diploma/Degree in Hospitality, Hotel Management, or related field.
- Minimum
5 years of F&B management experience
in the hotel or resort industry. - Strong leadership, interpersonal, and communication skills.
- Excellent knowledge of F&B operations, service standards, and event management.
- Strong financial acumen and analytical ability.
- Ability to work in a fast-paced environment and handle multiple responsibilities.
- High level of integrity, professionalism, and guest service orientation.
Working Conditions
- Fast-paced, guest-facing environment involving frequent walking, standing, and floor supervision.
- Requires direct interaction with guests, staff, vendors, and management teams.
- It may require working beyond standard hours to meet project deadlines.
