Job Description:

Tamu Vacation Club (A Members of Zikay Group Berhad) is seeking a talented Executive Chef to join our team.

Responsibilities:

  1. We are looking for an experienced Executive Chef who can continually update and review all food purchase specifications, par stocks, recipes, portion control charts, preparation and production methods to ensure productivity, efficiency and the highest possible standards at all times.
  2. The ideal candidate will have strong leadership skills and be able to control requisition of all food supplies and equipment, both incoming and outgoing.
  3. Daily attendance at F & B Briefings and monthly F & B Meetings is essential for this role.
  4. In the event of any complaints on reported food poisoning, accidents or incidents, the Executive Chef must immediately investigate and take corrective actions as per hotel policy.
  5. This position requires close collaboration with the Chief Steward to establish and implement an effective cleaning program.
  6. The successful candidate will also coordinate with Purchasing and Storeroom to determine the minimum and maximum food par stocks.
  7. Outlets and banquet food setups and presentations will be directed by the Executive Chef, continuously reviewing and upgrading the standard.
  8. The ability to standardize recipes, including yield test for ingredients, method of preparations and presentations, is crucial for this role.
  9. An effective cleaning schedule to maintain high sanitation standards in the kitchen must be established and implemented by the Executive Chef.
  10. Regular market surveys will be conducted by the Executive Chef to determine the quality and market price of food supplies.

Requirements:

  • A Bachelor's Degree/ Post-Graduate Diploma/ Professional Degree in Food & Beverage Services Management or equivalent is required for this position.
  • Bahasa Malaysia and English language proficiency is necessary.
  • No less than 5 years of working experience in the related field is required, with proven expertise in chef management.
  • Contemporary F&B concepts and agile, proactive thinking in PR and marketing environments are highly valued.
  • The ideal candidate should possess personal and entertaining abilities for innovative dining events.
  • Experience managing large complex operations with multiple outlets is essential.
  • A deep understanding of contemporary restaurant and banqueting concepts is necessary.
  • Strong organizational and administrative skills, along with financial and cost management abilities, are required.
  • The ability to communicate effectively and train and develop team members at all levels is crucial.
  • Continuous product review and frequent changes on seasonality and attractiveness of offerings made to customers are expected.
