Captain - Nizza (Mediterranean Restaurant)

Job Summary:
The Restaurant Captain assists in supervising daily operations at Nizza, Sofitel's Mediterranean restaurant. Responsible for ensuring smooth service flow, coordinating between guests and service staff, and upholding Sofitel's luxury standards through attentive, refined, and professional service.
Key Responsibilities:
Operations
- Supervise and coordinate the work of the service team during meal periods.
- Ensure efficient mise-en-place, table setup, and readiness before service.
- Oversee food and beverage delivery, ensuring accuracy and presentation meet Sofitel standards.
- Support the Restaurant Manager in daily briefings and floor management.
- Handle reservations, table assignments, and VIP guest arrangements when required.
- Ensure cleanliness, order, and ambiance of the restaurant at all times.
Guest Experience
- Greet guests and assist in seating, ensuring personalized and attentive service.
- Monitor guest satisfaction and handle feedback or complaints professionally.
- Recognize repeat guests and maintain detailed records of preferences.
- Promote menu highlights, daily specials, and wine pairings confidently.
- Coordinate with kitchen and bar for smooth communication and service flow.
Team Leadership
- Guide and motivate servers and bus staff to deliver consistent, quality service.
- Conduct on-the-job training for new team members on Sofitel service standards.
- Assist in creating staff schedules and ensure adequate coverage during peak hours.
- Encourage teamwork and maintain a positive, professional working environment.
Administration
- Assist in handling cashiering, billing, and closing procedures accurately.
- Monitor inventory levels for chinaware, glassware, and operating supplies.
- Report maintenance and equipment issues promptly.
Requirements:
- Diploma or Certificate in Hospitality or F&B Management.
- Minimum 2 years' experience in a similar role, preferably in fine dining or a 5-star hotel restaurant.
- Strong communication and leadership skills.
- Excellent command of English; additional language skills are an advantage.
- Knowledge of POS systems and fine dining service procedures.
- Flexible to work shifts, weekends, and public holidays.
