**Job Description**:
Financial
- Helps to direct, control and coordinate the activities of all chefs and kitchen helpers, engaged in preparing and cooking food, to ensure an efficient, profitable and smooth food service at all times.
- Inspects storerooms, refrigerators and freezers daily to ensure no wastage
- Assists the Sous Chef/Executive Chef to control cost by minimizing spoilage, utilizing food surpluses and portion control
- Check the quality and quantity of food received from the markets and stores
- Is always looking for cost saving and environmental ideas
- Assists in operating all outlets and all dependent outlets, at an acceptable food and connectors cost
- Maximizes connectors productivity, in order to minimize payroll costs
- Monitors all kitchen operating costs and take corrective action, when necessary, to reduce expenses

Operational
- Is in charge of the outlet in absence of Supervisor
- Ensures that food is prepared and served according to the standard set by Executive Chef
- Produces and checks preparation and presentation of all food
- Make sure standard recipes are used, and food is presented according to pictures
- Make sure that all machines, furniture (fridges, benches, etc.), equipment and utensils are clean and in working condition at all times.
- Checks all areas assigned in regards to sanitation and hygiene contamination of any kind
- Make sure the kitchen is always in a safe condition, so as to prevent accidents
- Is responsible in making the flow of information work, all the way to the helper’s level
- Maintains good relationship with all departments to avoid frictions of any kind

Employee Handling
- Maximizes personal and team members’ productivity and morale, whilst consistently maintaining discipline, following the Hotel’s guidelines and local legislation
- Motivates all connectors through professionalism, organizational skills and team spirit to perform their duties
- Ensures all supervised connectors are in proper uniform, well groomed as set by culinary guidelines
- Reports all accidents, health and safety hazards to the Sous Chef/Executive Chef
- Attend in Chefs’ daily briefing or meeting

Administration
- Maintain all events/activities/ promotion records and forms as prescribed by the Executive Chef and/or the Hotel
- Writes out maintenance requests if necessary, and check on completion

Work Experience

Knowledge and Experience
- 3 years in Culinary and minimum 1 years as a Demi Chef in a 4 star operation
- Thorough professional knowledge of culinary production basics
- Thorough knowledge of culinary aspects in cost control, culinary labor control, equipment maintenance
- Have strong leadership and communication skills

- Reading, writing and oral proficiency in Bahasa Malaysia and English
